Spanish pancakes

Spanish pancakes

Ingridients:

  • 2 eggs
  • 120 ml. milk
  • 500 g. of fresh zucchini
  • 30 g. butter
  • 50 g. parmesan
  • 150 g. flour
  • 100g. cheese (as a side dish)
  • a little chopped parsley
  • salt and ground white pepper
  • nutmeg 

Preparation:
Shred zucchini, season with salt and leave for 15 minutes to drain. After that, mix ingridients for pancakes and add chopped zucchini mixture.

Heated pan oil with butter. Next, pour the mixture into the pan, no thicker than ½ cm, and bake on both sides until they get golden color. Serve on a plate with parmesan and tomato ring. Enjoy! ツ
